Limoncello Recipe (*****)

After making this for years, it’s time to put down the official recipe for my loyal followers.

You need:

  • 18-20 fragrant and beautiful lemons
  • 100 proof Vodka (Nikolai 1.75 liters costs about $15)
  • A big mason jar, I use a 2-liter lock-top jar
  • Potato peeler
  • Sugar

Carefully peel the lemons, avoid the white part of the lemon.  Put the peels in the mason jar and fill with vodka, tightly close the jar.  Stir or mix every day or two, allow them to soak for 1 to 3 months.

Make a simple syrup of 4 cups of sugar and 3 cups of water heated until the solution boils and the sugar dissolved.  Allow it to cool, then add the vodka from the lemon peels and mix the liquids.  I usually put my limoncello into liter bottles and allow the bottles to stand for at least a week, they should clear nicely.

So as not to waste the lemons, we squeeze the lemon juice and put it in the refrigerator for later use.  The peels are candied using the recipe found here.

The finished product is usually about 40 proof.  That is strong enough for me.  Some people make this using grain alcohol, but the resulting drink is way to strong to enjoy.  Make sure you put a small bottle of your limoncello in the freezer, we always drink it as ice cold shots.  Enjoy!
